Because as promised, my blog isn’t going to be limited to EMS. It’s about all the things that go through my mind. And as many of y’all know, I’m a self-taught Texas BBQ fan.
Went to one of my previously favorite BBQ joints here in Austin tonight and it had so many things wrong with it. But the thing that kept coming to the forefront was the counter help/cutter. Just like a bad waiter or waitress can ruin a meal, bad counter help can ruin a Texas BBQ experience — whether it’s the unfriendliness or improper cutting ruining the meat. You never get a chance to correct a first impression and for a Texas BBQ joint, the cutter/counter help is that first impression.
Life is too short for bad BBQ. That goes doubly so when you live in Central Texas, where the BBQ makes up for the wacky Austin politics.
